Bacon and Leek Stirfry

2 large organic leeks
6 rashers of smoked bacon
half a cup of porridge oats
salt & pepper
Oil for the pan

Chop and wash the leeks. Chop the bacon into strips. Heat the pan with the oil and add the leeks, bacon, salt, and pepper.

Stir fry until cooked - there should still be liquid from the leeks in the bottom of the pan. Add the oats and stir until all the liquid is absorbed.

Serve hot with mashed potatoes.
